Skinny does not equal healthy. Am I right? Let me get an "AMEN!" There are fat people who are unhealthy and there are skinny people who are unhealthy. This is not a blog about "skinny" and this is not a blog just about my body. This blog is about bettering my life in many ways... forever! This blog is about getting healthy; being well-rounded in life and less-rounded in body. I am the type to laugh at my own jokes, so I gotta admit, that last line made me smile. ;)

Two Go-To Recipes: 21 Day Fix
Mahi-Mahi with Peppers and Sweet Potato
Yellow container- Sweet Potato
Green Container- Sliced Peppers
Red container- Mahi-Mahi
1-2 tsp- healthy oil
Lemon Pepper to taste
I eat this for lunch about once a week. It gives me variety, and it is GOOD!
Sliced Pear with Cinnamon
Sliced pear with cinnamon (or pumpkin pie spice) is SO good- it tastes like desert.
I have a big sweet tooth, and this hits the spot :)
My kids love it as much as I do.

Chocolate Ganache (with Strawberries)
Yum! This stuff is kid approved and only takes 5 ingredients :)
My kids are regular-candy-eating-kids, and they prefer this stuff! It is good. :)
What you will need:
One bag of Dates
1/3 cup Coconut oil
1 tbsp Honey
1/2- 3/4 cup of Water
1/2 cup Cocoa Powder (to taste, I like mine dark, the kids like it too!)

What you will need:
One bag of Dates
1/3 cup Coconut oil
1 tbsp Honey
1/2- 3/4 cup of Water
1/2 cup Cocoa Powder (to taste, I like mine dark, the kids like it too!)
In a food processor or blender- mix bag of dates, coconut oil, honey, water
Blend until almost smooth (it will be a little chunky)
Add cocoa powder, blend until smooth
Pour into a dish of your choice- a bowl, a pie plate, or an 8x8 casserole dish (lined if you want to)
Smooth and let cool in the fridge
Serve on a small plate with Strawberries
(I give the kids a generous scoop!)
This has a fluffy, creamy texture. It is really good with fruit- strawberries are our favorite pairing.
